How the counter works, why the list is short, and what to expect if you sit down for an hour.
One counter
We started with one counter, a short list on a chalkboard, and a rule we still keep: everything is made to order, and nobody gets hurried along.
The list is short because everything on it is something we want to make forty times a day. When something stops earning its place, it comes off — which is why the menu you are reading is the menu, not a printout of one.
Made slowly, on purpose
A brew that drips takes the time it takes. We could pull it faster with different equipment and it would be a different drink, so we do not.
If you are in a hurry, tell us when you order and we will say honestly whether it will be ready in time. We would rather lose the sale than hand you something rushed.
The room
There is a stool by the window, a long table that strangers share without much fuss, and no music loud enough to talk over.
Stay as long as you like. Nobody is going to clear your cup to make a point.
